Vous entrez dans le cellier où le tirage est sur le point de débuter.
Sur votre gauche, les palettes de bouteilles vides sont stockées depuis la semaine passée, alors qu'au fond, les matières sèches (bouchons et agrafes) sont inventoriées et contrôlées par Christian.

Pour la première fois depuis la création de la maison, un blanc de noirs sera tiré cette année.
Les vins clairs issus des vignobles de la Côte-des-Bar ont montré, lors des dégustations, une structure intéressante, un fruit subtil et une belle acidité : ce sont les vins clairs les plus adaptés pour cet assemblage.

Olivier termine de préparer la première mixtion et vous propose de prendre un échantillon pour contrôler la densité et la population de levures. Alice est très occupée à la préparation de commandes urgentes pour les Etats-Unis. Christian, quant à lui, termine la préparation de la ligne avec quelques bras supplémentaires pour cette campagne de mise en bouteille.

After having given the green light to Olivier, you go down to the cellar to prepare the planchots which will identify the piles of bottles
soon to be interred for a few years.
Chalk in hand, you note in your best handwriting the date of the draw, the cellar number and the reference of this new cuvée. In a very short time, the slow work of the yeasts will begin. The prize de mousse will be the beginning of a long story for each bottle. After resting on slats, the bottles will be pointed on a desk then stirred by hand, as your elders already did.

Draw day is over. At sunset, you decide to take a quick trip in the gallipes.
You discover in the first plot a very advanced state of the flower seeming to announce an early harvest this year.
Remembering your last harvest, you return to the family estate with the enthusiasm of reliving, within a hundred days, these good times of reunion with your faithful teams of pickers.
