Christian fait remarquer que le temps sec de l’année dernière a beaucoup impacté les vins clairs.
Olivier, quant à lui, souligne que la chaptalisation sera faible et c’est tant mieux. Vous acquiescez en rappelant à l’équipe que le minimum d’intrants reste la règle, dans la vigne comme en cuverie, pour laisser le vin exprimer ce que la vigne a vécu durant l’année écoulée.
